I think part of the reason why Gabriel is being so calm around Sam is that he’s never had a real reason not to be. Sam has basically always been nice to him.

Gabriel killed Dean over 100 times, and Sam spent months searching for him just to get all teary-eyed and beg him to bring his brother back.

Sam found out that the Incredible Hulk just killed a guy, and his solution when he found of the trickster was behind it was to ignore that and just go talk to him.

Gabriel popped in when the Winchesters had just been kidnapped by a bunch of pagan gods, and Sam never accused him of anything, despite this being right up his alley. It was Dean who did the arguing. Sam just sat back and watched how things played out.

Sam and Gabriel have never had a problem, and I think Gabriel remembers that.
